Upgrading a Dhaba to Pizza and Tandoor
Murthal's roadside kitchens already run hot and fast. Adding a pizza oven works only if the paperwork and the fuel are sorted first.
What has been raised about Murthal
In a case before the National Green Tribunal about eateries on GT Road at Murthal, the Central Pollution Control Board told the tribunal that restaurants and roadside eateries there were operating without approval from the state pollution control board and without permission to extract groundwater. The tribunal asked CPCB to finalise a standard procedure for highway restaurants.
The lesson for a new oven is simple: have your consent, groundwater and waste papers in order before you add equipment.
Your pre-install file
- State pollution board consent status for the outlet
- Groundwater permission, if you draw from a borewell
- Waste handling arrangement for the kitchen
- Fuel and flue specification of the new oven or tandoor
- Landlord or plot-owner approval for the gas line
We can supply the oven's fuel and chimney specifications for your file.
What the Approved-Fuel List Means in a Sonipat Kitchen
Sonipat is on the Haryana side of the NCR, so the Commission for Air Quality Management's list applies to it.
| Fuel | Position on the CAQM list | What it means for you |
|---|---|---|
| Natural gas (PNG) | Approved | Cleanest long-term choice where a pipeline reaches you |
| LPG | Approved | Fallback where there is no pipeline; needs a safe cylinder bay |
| Wood or bamboo charcoal | Allowed for tandoors and grills of hotels, restaurants and banquet halls with an emission control system, and for open eateries and dhabas | Possible, but conditions apply and local orders can tighten them |
| Biomass pellets and briquettes | Same conditions as charcoal | Same advice: confirm before you rely on them |
| Coal | Banned across the NCR since 1 January 2023 | Do not plan any coal-fired oven or tandoor |
CAQM said its flying squads would make incognito visits to check compliance with the approved-fuel directions. GRAP orders in winter can go further than this list. Confirm your own site with the Haryana State Pollution Control Board. This is information, not legal advice.
Two Authorised Gas Areas, One Question: Is the Pipe on Your Road?
Who supplies what
The Petroleum and Natural Gas Regulatory Board has authorised GAIL Gas Limited for the Sonipat geographical area. A second authorisation covers the rest of the district, where HPCL has reported industrial connections.
Commercial PNG covers restaurants, hotels and canteens, subject to a pipeline reaching the plot. A rented or leased premises can still apply.
What to do this week
- Find out which of the two areas your plot falls in.
- Ask that operator whether a commercial line is live on your road.
- If not, plan an LPG bay and a fixed gas line.
- Send us the gas type so the burner is fitted correctly.
Compare the cost with the Wood vs Gas Calculator.
Size the Oven for the Busiest Fifteen Minutes
Highway example: a bus of 40 passengers stops for 20 minutes and half of them order pizza. That is 20 pizzas in about 15 minutes, a burst of roughly 80 an hour.
Check it: bakes per hour = 3,600 divided by bake seconds. A 90-second bake gives 40 bakes an hour. With 2 pizzas per bake that is 80 in theory, and you should plan on 70 to 80 percent of that for heat recovery, so about 56 to 64.
What to do: add a second deck, or split the menu so the tandoor and the oven share the load. This is a planning example, not a model specification. Use the capacity calculator with your own numbers.

Before You Buy a Pizza Oven or Tandoor in Sonipat
Which wood fired pizza oven manufacturer serves Sonipat?
Forno Sethi, a Delhi manufacturer working since 2017, builds wood fired, brick and hybrid pizza ovens and commercial tandoors at its own workshop in Burari, north Delhi, and supplies Sonipat, Kundli, Murthal and Rai. It has installed 250+ kitchens across India and supports installation on site.
Can a Murthal dhaba or highway restaurant cook with wood or coal?
Coal has been banned across the NCR since 1 January 2023. The approved-fuel list of the Commission for Air Quality Management allows wood or bamboo charcoal and biomass pellets or briquettes for tandoors and grills of hotels, restaurants and banquet halls with an emission control system, and for open eateries and dhabas. Natural gas and LPG are approved outright. GRAP orders and local authorities can add limits, so confirm with the Haryana State Pollution Control Board and plan the kitchen so it can run on gas.
Which company supplies piped gas in Sonipat?
The Petroleum and Natural Gas Regulatory Board has authorised GAIL Gas Limited for the Sonipat geographical area, and a second authorisation covers the rest of the district, where HPCL has reported industrial connections. Commercial PNG for restaurants, hotels and canteens depends on a pipeline reaching your plot, and rented premises can apply. Ask both operators about your exact location and keep an LPG bay as backup.
Do highway eateries in Sonipat need pollution board approval?
Eateries on GT Road at Murthal have been the subject of a National Green Tribunal case, where the Central Pollution Control Board told the tribunal that restaurants and roadside eateries there were operating without approval from the state pollution control board and without permission to extract groundwater. Check consent, groundwater and waste requirements with the Haryana State Pollution Control Board before adding an oven or tandoor. We can share fuel and chimney specifications for your paperwork.
Can you supply a commercial tandoor along with the pizza oven?
Yes. Forno Sethi makes commercial tandoors with a clay pot core and a stainless steel outer shell alongside its brick, hybrid and portable pizza ovens, so a dhaba or restaurant can plan both on one gas supply.
Which oven suits a campus cafe or a factory canteen near Kundli?
Campus cafes with short breaks need fast heat-up and repeatable bakes, so a countertop gas oven or a brick oven on wheels works well. A factory canteen that serves one lunch window needs more deck area, so a fixed brick oven or a larger wheeled oven fits better. Share the headcount and service window and we will size it.
How long does an order take for a Sonipat site?
A factory-built oven is typically ready in 7 to 10 days, with about a day of installation on site. An on-site brick build takes 3 to 5 days at your location, which suits upper-floor cafes and tight lanes. Gas connection and paperwork can take longer than the oven, so start them first.
Tell Us Your Rush Hour and Your Gas Situation
Share your location, headcount and whether a gas line reaches you. We will recommend the oven, and a tandoor if you need one, before you spend a rupee.
